Working from Finca El Placer in Quindío, he has built a reputation for using fermentation not just to create intensity, but to design specific flavor profiles that still feel clean, sweet, and balanced. This Watermelon Co-Ferment is a perfect example of that approach: wildly expressive, immediately recognizable, and genuinely delicious.

In the cup, this coffee leads hard with watermelon, followed by bright mandarin and a big fruit punch sweetness that makes the whole thing feel electric. It’s juicy, vibrant, funky, fun and very much in your face.

The process is a high-intervention co-ferment built around watermelon. The coffee undergoes an extended anaerobic fermentation before being fermented again with dehydrated watermelon, fruit glucose, and carefully controlled conditions designed to amplify sweetness and aroma. The goal is not to simply make coffee taste unusual, but to create a fruit-saturated cup that feels playful, polished, and still rooted in quality coffee production.
