Aponte Village Honey comes from the Indigenous Inga community of Aponte in Nariño, Colombia, where smallholder producers grow coffee at high elevations on communal lands. Rather than coming from one single farm, this is a community lot that represents the work of many producers in the region. The area’s cool mountain climate, volcanic soils, and elevations above 2,000 meters help create dense, sweet coffees with bright acidity and layered fruit character. What makes Aponte especially interesting is the community’s dedication to honey processing, which is still relatively uncommon in Colombia. In this method, the coffee is depulped but dried with its sticky fruit mucilage still attached to the seed. That added contact between fruit and coffee during drying builds sweetness, body, and ripe fruit intensity while using less water than a traditional washed process. When done well, as it is in Aponte, the result is a cup that feels saturated, clean, and extremely sweet. In the cup, this coffee is bright, juicy, and deeply enjoyable. We taste green apple, wild blueberry, fresh lemonade, and honey, with a lively citrus lift and a smooth, sweet finish. It has enough fruit and acidity to feel exciting, but enough balance and sweetness to make it an easy everyday favorite.
