Colombia Sebastian Ramirez Watermelon Co-Ferment

Sebastián Ramírez is one of Colombia’s best-known experimental coffee producers, working at El Placer in Quindío and specializing in highly controlled fermentations designed to create bold, distinctive flavor profiles. This Watermelon Co-Ferment is exactly that: intensely expressive, immediately recognizable, and a lot of fun to drink. The disclosed process starts with 120 hours of anaerobic fermentation in sealed tanks at 18°C with CO₂. The coffee is then depulped and fermented for another 72 hours with dehydrated watermelon and fruit glucose before being carefully dried under controlled conditions. The result is a fruit-saturated cup with huge watermelon character, bright mandarin, and a sweet fruit-punch finish. This is a high-intervention coffee and it tastes like one. Expect an unmistakably watermelon-forward profile: juicy, sweet, candy-like, and far outside the range of a traditional washed coffee.
