Andrés Martínez is part of a new generation of Colombian producers using science, precision, and deep coffee knowledge to push quality forward. With roots in coffee farming and a background in biochemical engineering, Andrés began his career at Tecnicafé in Cauca before working at Finca El Paraíso with Diego Samuel Bermúdez, where he focused on soil studies and process standardization. He now runs his own project, El Sendero in Cauca. This Blackberry Honey Co-Ferment is built around sweetness, body, and dark fruit. The honey process leaves sticky fruit mucilage on the coffee during drying, helping create a rounder texture, deeper sweetness, and more concentrated flavor than a classic washed coffee. In this cup, that comes through as lush blackberry, rich caramel, and brown sugar sweetness. What makes this coffee special is how approachable it is for a Co-Ferment. It has plenty of intensity and a big fruit-forward profile, but it doesn’t feel overly funky or chaotic. Instead, it drinks smooth, syrupy, and polished. It's the kind of high-end experimental coffee that still feels easy to love.
